Bagels
Mix together:
- 1 1/8 cups lukewarm water
- 3 tablespoons sugar
- ½ teaspoon salt
- 1 teaspoons dry yeast
Stir until the yeast is dissolved.
Add:
- 2 tablespoons oil
- 3½ to 3¾ cups flour
- ¼ cups non-fat dry milk powder (mix this with
the flour prior to mixing with the liquid)
Add the 3 cups of dry ingredients and stir with a spoon. Add additional flour as needed and kneed by hand. Dough should be soft but not too sticky. Let it rise to twice its volume. Kneed it down, shape into donuts. Place on well greeced tinfoil squares and allow to rise again, then drop into boiling water (the tinfoil is used to transport the risen dough without making it fall, and will release when place into boiling water). Boil for 2 minutes on each side, then remove to a baking pan, brush with beaten egg white, top with sesame/poppy seeds or onion/garlic salt/powder, and bake for 30 to 40 minutes at 350° F.
