Charlottle Allen's Carrot Pudding and sauce.

Pudding:

  • 1 cup grated carrots
  • 1 cup grated potatoes
  • 1 cup raisins
  • 1 cup flour
  • ¾ cup sugar
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • ½ teaspoon cloves
Mix ingredients together
Steam 3 hours


Vanilla/Lemon Sauce:

  • 2 cups water
  • 2 Tablespoons corn starch
  • pinch of salt
  • 1 cup sugar
  • 1 Tablespoon Vinegar
  • 1 teaspoon vanilla or lemon extract
  • 2 Tablespoons butter
mix in saucepan 1 cup sugar, 2 tablespoon corn starch.
Stir in gradually 2 cups boiling water.
Boil 1 minute, stirring constantly.
Stir in butter and vinegar, and vanilla or lemon extract
