Cheesecake

  • 2 cups (approx) graham cracker crumbs
  • 2 T margarine
Mix well and press into a 9 inch pie pan
  • 1 package (8 ounces) cream cheese (softened [microwave 30 seconds])
  • 1 can (14 ounces) sweetened condensed milk
  • 1/3 cup lemon juice
  • 1 teaspoon vanilla extract
Beat the cream cheese until it is light and fluffy. Add the sweetened condensed milk and blend thoroughly. Stir in the lemon juice and vanilla. Pour into the crust. Chill two hours or until set. Top with desired thickened fruit (cherrys, strawberries, etc.). Thicken with cornstarch--take approx. ½ cup liquid from the fruit, add 1 tablespoon of cornstarch, and boil to thicken. After it is thick, add the fruit, cool, and pour on top of the cheesecake. It the fruit has not been sweetened, add ¼ to ½ cup of sugar to the juice before boiling.
