Crepes
Filling:
- 2 cups fruit (strawberries, raspberries, blue berries, cherries, mangos, pineapple or ?)
- 1 cup sugar
- 2 T tapioca (quick cooking)
Chop the fruit, add sugar and tapioca, heat to boiling with frequent stirring, reduce heat and simmer until thick (with frequent stirring).
Shell
- 1 cup flour
- 1 large egg
- 3 T oil
- pinch salt (optional)
- Liquid (water or milk) to make a thin batter
Spread batter on grill, turn when hardened. Stack to "age."
(Ameilia Recipe:
- 1½ c milk
- 1 c flour
- 2 eggs
- 2 T oil
Mix liquids in a blender, then slowly add flour.)
Whipped cream
- 1 Cup whipping cream
- ½ Cup sugar
- 1 T Vanilla
Beat (with egg beater) cream until stiff. Add sugar and vanilla and continue beating briefly to mix.
Roll filling inside shell, and top with whipped cream.
