Crepes

Filling:

  • 2 cups fruit (strawberries, raspberries, blue berries, cherries, mangos, pineapple or ?)
  • 1 cup sugar
  • 2 T tapioca (quick cooking)
Chop the fruit, add sugar and tapioca, heat to boiling with frequent stirring, reduce heat and simmer until thick (with frequent stirring).

Shell

  • 1 cup flour
  • 1 large egg
  • 3 T oil
  • pinch salt (optional)
  • Liquid (water or milk) to make a thin batter
Spread batter on grill, turn when hardened. Stack to "age."

(Ameilia Recipe:

  • 1½ c milk
  • 1 c flour
  • 2 eggs
  • 2 T oil
  • Mix liquids in a blender, then slowly add flour.)

    Whipped cream

    • 1 Cup whipping cream
    • ½ Cup sugar
    • 1 T Vanilla
    Beat (with egg beater) cream until stiff. Add sugar and vanilla and continue beating briefly to mix.

    Roll filling inside shell, and top with whipped cream.
