Date Sticks

  • 2 eggs
  • 1 cup sugar
  • 2/3 cups flour
  • 2 tsp baking powder
  • 1 tsp vanilla
  • pinch of salt
  • 1 cup dates--chopped and pitted
  • 1 cup walnuts--chopped
  • ½ cup coconut--shredded unsweetened
Beat the eggs, then add sugar, baking powder, vanilla, salt, and most of the flour. Mix well. Use the remaining flour to coat the chopped dates, nuts, and coconut, then combine with the above mixture. Spread evenly in a well greased 9 X 9 inch baking dish, and bake at 325° F for 25 minutes. Makes 16 pieces.
