- 2 cup light brown sugar (packed)
- 1 cups sugar
- 1 cup cream (20%)
- 2 tablespoons corn syrup (Karo)
- ¼ teaspoon salt
- 3 tablespoons butter
- 1 teaspoon vanilla extract
- ½ cup chopped nuts
Mix together the brown sugar, corn syrup, sugar, and cream. Heat to boiling, and cook over medium heat, stirring occasionally, until a drop placed in cold water forms a soft ball (234°F or 112°C). Remove from heat, add butter, and allow to cool until lukewarm (120°F or 49°C). Add the vanilla extract and stir until creamy. Mix in nuts, then pour into a greased pan (8 or 9 inch square) and let cool.
