Tamale Pie This is lifted from a letter from Norma LeFevre to Alan Hatch, dated 1 Dec 1970. Here is the tamale pie: 1½ pounds ground meat, beef or a mixture of beef and pork, 1 bell pepper and 1 medium onion chopped fine. Cook meat, onion and bell pepper until done and a bit brown. Add 2 cups of tomatoes, 2 or 3 tsp chili powder, salt and pepper to taste. If desired add ½ cup ripe olives, sliced. Simmer about 20 minutes. Now make a corn meal mush by mixing 1 cup of cold water with 1 cup corn meal. Stir in 3 cups of boiling water, 1 tsp salt and boil 5 minutes at least. Now if you bake this dish, put the corn meal mush in the bottom of the baking dish, add the meat and tomato mixture to top and sprinkle grated cheese on top of that. Bake 30 to 40 minutes at about 350 degrees. If you make all of it on top of the stove, add the meat and tomatoes to the mush, or the mush to the meat, stirring just enough to mix well. Next top with grated cheese and simmer with lid on for 10 to 15 minutes. Burns readily, so use very low heat.
